Gluten-free Peanut Butter Muffins

INGREDIENTS//
- 1 3/4 cup gluten-free all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup coconut oil, liquid
- 1/3 cup honey
- 1/4 cup brown sugar
- 3/4 cup peanut butter (not too oily)
- 1/2 cup milk (almond milk for dairy free)
- 1 tsp vanilla
- 2 eggs
DIRECTIONS//
1. Preheat oven to 425 and spray a muffin tin with non-stick spray.
2. In a small mixing bowl, add flour, baking soda, and salt. Whisk together.
3. In a large mixing bowl, add your coconut oil, honey, and brown sugar and whisk them together. Next, add your peanut butter, and whisk until smooth. (If your peanut butter is to oily the consistency of the muffins will be wrong. I think original peanut butter works best for this recipe). Add your milk, vanilla, and eggs and whisk them until fully blended.
4. Add your dry ingredients to your wet ingredients and stir together till well combined.
5. Fill each muffin cavity 3/4 of the way full with muffin batter.
6. Bake in oven for 5 minutes. Lower your oven temp to 350, and bake for another 17-20 minutes, or until muffins are springy to the touch. This allows for the muffin tops to expand.
7. Let cool and enjoy!
